I know that the meat I supply will fulfill all that most important criteria - delivery on the plate. It will give you the best tasting and most tender meat that money can buy. After a minimum of 35 days hanging, the beef will absolutely be second to none.
Beef hung for at least 35 days can lose up to 20% of its original weight. This means your meat will shrink a lot less during cooking, if at all. After the correct hanging period the meat will be an absolutely amazing product beyond compare.
Naturally reared pink veal is barn reared in social groups, bucket fed on milk. The pink hue comes from the calves eating solid feed, like straw or mum's food. Welfare is always a particular issue with veal and that is all covered by the Cumbrian Veal Framers social group policy. This natural veal is produced as it would have been 50-100 years ago from dairy bull calves. This veal is tender and has a light and delicate flavour, to fulfill the requirements of classic veal dishes.

Herdwick lamb and mutton has a distinct flavour which has been lost in more commercial breeds. Herdwick lamb and mutton has a dense tight grained texture, slight marbling and contains omega 3 in the fat. This lamb is young and tender with a robust flavour only available from a member of the primitive group of sheep.
Herdwick mutton is from superior finished ewes, which will not only eat like mature lamb in flavour but will also be tender like lamb. This mutton is the premier product of Cumbria.
